Apple Pie Cookies

Ingredients
  

Cookie Dough
  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
Apple Filling
  • 2 cups apples, peeled and finely diced about 2 medium apples
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1 tbsp all-purpose flour to thicken filling

Method
 

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy. Add the egg and vanilla, mixing well. Gradually add the flour until a soft dough forms. Chill dough for 15 minutes.
  3. Prepare the apple filling by combining diced apples, brown sugar, cinnamon, and flour in a small bowl. Stir well until apples are coated.
  4. On a floured surface, roll out the chilled dough to about 1/4-inch thickness. Cut out circles using a cookie cutter.
  5. Place half of the dough circles on the baking sheet. Spoon a small amount of apple filling into the center of each circle. Cover with another dough circle and press edges to seal with a fork.
  6. Bake for 18–20 minutes, or until golden brown. Let cool on a wire rack for at least 30 minutes before serving.

Notes

For extra flavor, brush the tops of the cookies with an egg wash and sprinkle with cinnamon sugar before baking.
