Method
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the butter and sugar until light and fluffy. Add the egg and vanilla, mixing well. Gradually add the flour until a soft dough forms. Chill dough for 15 minutes.
- Prepare the apple filling by combining diced apples, brown sugar, cinnamon, and flour in a small bowl. Stir well until apples are coated.
- On a floured surface, roll out the chilled dough to about 1/4-inch thickness. Cut out circles using a cookie cutter.
- Place half of the dough circles on the baking sheet. Spoon a small amount of apple filling into the center of each circle. Cover with another dough circle and press edges to seal with a fork.
- Bake for 18–20 minutes, or until golden brown. Let cool on a wire rack for at least 30 minutes before serving.
Notes
For extra flavor, brush the tops of the cookies with an egg wash and sprinkle with cinnamon sugar before baking.
