Method
- Preheat oven to 350°F (175°C). Grease and flour a bundt pan.
- In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
- In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in eggs one at a time, mixing well after each addition.
- Mix in the reduced apple cider and sour cream until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Pour the batter into the prepared bundt pan and smooth the top.
- Bake for 45–50 minutes, or until a toothpick inserted comes out clean.
- Let the cake cool for 10 minutes, then carefully remove from the pan.
- Brush the warm cake with melted butter and sprinkle generously with the cinnamon-sugar mixture.
Notes
For the best flavor, reduce the apple cider before adding it to the batter. Simply simmer until it reduces by half. This intensifies the apple flavor in the cake.
