Method
- Preheat oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
- In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.
- In another bowl, beat the eggs and oil until combined. Add grated carrots and stir well.
- Gradually add the wet mixture to the dry ingredients, mixing until just combined. Fold in walnuts if using.
- Pour the batter into the prepared pan and bake for 40 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool completely in the pan before frosting.
- To make the frosting: Beat cream cheese and butter until smooth. Add powdered sugar gradually, then mix in vanilla extract until creamy.
- Spread the frosting evenly over the cooled cake. Slice and serve.
Notes
For added flavor, substitute half of the walnuts with raisins or shredded coconut. The cake tastes even better the next day after the flavors meld.
