Amish Apple Fritter Bread

Ingredients
  

Bread Batter
  • 1/2 cup unsalted butter softened
  • 2/3 cup granulated sugar
  • 2 eggs room temperature
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour sifted
  • 1 3/4 tsp baking powder
  • 1/2 cup milk
Apple Mixture
  • 2 cups apples peeled and chopped
  • 1/3 cup brown sugar
  • 1 1/2 tsp ground cinnamon
Glaze
  • 1/2 cup powdered sugar
  • 1-2 tbsp milk as needed for consistency

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  2. In a large bowl, cream together butter and granulated sugar until light and fluffy. Beat in eggs and vanilla extract.
  3. In a separate bowl, whisk together flour and baking powder. Gradually add to the butter mixture, alternating with milk, until a smooth batter forms.
  4. In another bowl, combine chopped apples with brown sugar and cinnamon. Toss to coat well.
  5. Spread half the batter into the prepared loaf pan. Layer half of the apple mixture on top. Add the remaining batter and then top with the rest of the apples. Lightly swirl with a knife to create a marbled effect.
  6. Bake for 50 minutes or until a toothpick inserted into the center comes out clean. Let cool for 15 minutes before removing from the pan.
  7. Whisk together powdered sugar and milk until smooth. Drizzle glaze over cooled bread before slicing.

Notes

For extra flavor, try adding a pinch of nutmeg to the apple mixture. This bread also freezes well—wrap tightly and store for up to 2 months.
